Beetroot smoothie bowl
 
Ingredients
  • 50-100 g (ca. ½-1) frozen banana⁣⁣⁣⁣
  • 100 g frozen beetroot*⁣⁣⁣⁣
  • ½ tbsp maple syrup, more to taste ⁣⁣⁣⁣
  • ½ tsp ceylon cinnamon ⁣⁣⁣⁣
  • 1 (approx. 90 g) green (granny smith) apple, peeled ⁣⁣⁣⁣
  • 2 tbsp water (start with that and then add more slowly, tablespoon at a time, if needed)⁣⁣⁣⁣
  • squeeze of lemon, optional ⁣⁣⁣⁣
Instructions
  1. Put everything in a blender and mix thoroughly until thick and smooth.
Notes
*I always have a lot of frozen beets in my freezer. I roast them in the oven (ca. 1 kg) every now and then to use for this smoothie bowl or to add as a fiber-booster to my other favorite smoothies. Turn your oven to 200 degrees celcius/400 degrees fahrenheit and bake for approx. 40 minutes or until they are a bit soft. Then peel, cut in medium size pieces and put in a container and in the freezer. You can store them there for up to one month. ⁣⁣⁣⁣

If you want to make a super easy smoothie for your kids with beetroots, I recommend putting 30-50 g frozen beetroots*, 5-8 frozen strawberries (or a handful of frozen blueberries), 2-3 tbsp of yoghurt or skyr and ½-1 banana. Adding ½ green apple and a pinch of cinnamon is also popular in my house but only if we have enough time.
